Spiced date cookies
Got extra dates lying around? Try this simple spiced date cookies recipe. They're a delicious match for your morning coffee. Give them a whirl and satisfy your sweet tooth!

- 180 g unsalted butter
- ½ cup caster sugar
- 1 egg
- 1 teaspoon vanilla essence
- 1 ½ cup self-raising flour
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- 1 teaspoon ground cardamom
- ½ teaspoon ground cloves (optional)
- 1 cup dried and pitted dates (I used a mix of dates)
- 1 cup chopped walnuts or pecans.
- Splash of milk
Alchemy
- Preheat the oven to 180 and prepare your baking trays with baking paper.
- Beat butter, essence, sugar, and egg until light and fluffy (you can use the electric mixer to make it faster).
- Add the sifted flour and the spices then stir in the dates and the chopped nuts.
- Refrigerate for thirty minutes (this step will help prevent the cookies from spreading too much).
- Roll rounded teaspoons of mixture into balls, and place on the baking trays for about 15 minutes or until lightly browned.
- Enjoy it with a cup of coffee!
