Coconut Cake

Elements

  • 100 g butter, softened
  • 2 cups self-raising flour
  • 1 cup caster sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup grated coconut, plus extra for sprinkling
  • 3/4 cup plain yogurt

Chocolate Topping

  • 50 g unsalted butter
  • 100 g dark chocolate (I used 70% cocoa)
  • 200 ml whipping cream

Alchemy

  1. Preheat the oven to 180°C.
  2. Butter a loaf tin and line it with baking paper.
  3. Beat butter and sugar with an electric mixer until light and fluffy.
  4. Beat in the eggs and vanilla.
  5. Stir in sifted flour, yogurt, and grated coconut.
  6. Spoon the mixture into the prepared tin and smooth the surface with a spatula.
  7. Place in the preheated oven for about 45 minutes to 1 hour, until a wooden skewer comes out clean.
  8. Meanwhile, make the chocolate topping.
  9. Remove the cake from the oven and leave to cool for about 10 minutes.
  10. Pour on the chocolate topping and sprinkle with the extra coconut.
  11. Chocolate Topping:
  12. Mix the butter and chopped chocolate in the top of a double boiler and heat it gently over simmering water.
  13. Stir in the whipping cream until the chocolate is completely melted and smooth.
