Classic Marble Cake

I’ve tried many recipes for marble cake, and I like this one the most. The use of melted dark chocolate with espresso coffee gives the chocolate part a rich taste. It’s easy to make and a great companion to your cup of coffee.

  • 125 g butter, softened
  • 2 cups self-raising flour
  • 1 1/4 cups caster sugar
  • 2 tablespoons strong black coffee
  • 4 eggs
  • 100 g dark chocolate tablet (I used 70% cocoa)
  • 1/2 cup ground almonds
  • 1 cup plain yogurt
  • 3 tablespoons cocoa powder
  • 1 teaspoon vanilla extract

Alchemy

  1. Preheat the oven to 180°C.
  2. Butter a round cake tin and line it with baking paper or dust it with flour.
  3. Put the chocolate and coffee in a heat-proof bowl over a saucepan of gently simmering water until the chocolate is melted.
  4. Leave to cool.
  5. In a mixing bowl, beat the butter and sugar with an electric mixer until light and fluffy.
  6. Beat in the eggs with the vanilla, mixing well between each addition.
  7. Stir in the sifted flour and yogurt until well combined.
  8. Gently fold in the ground almonds.
  9. Divide the mixture into two halves.
  10. Add the melted chocolate and cocoa powder to one half and mix well.
  11. Spoon the vanilla and chocolate batters alternately into the prepared tin and smooth the surface.
  12. Using a wooden skewer, swirl the chocolate and vanilla mixtures.
  13. Place the cake in the preheated oven and bake for about 1 hour, or until a wooden skewer inserted into the cake comes out clean.
  14. Remove the cake from the oven and allow it to cool for about 10 minutes before serving.
