Classic Banana Bread

  • 3 ripe bananas
  • 1½ cups sugar
  • 1 cup yogurt
  • 1 cup light vegetable oil
  • 1 tbsp vanilla
  • ½ cup chopped walnuts
  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • Chopped pecans and chocolate shavings for topping

Alchemy

  1. Preheat your oven to 180°C. Prepare a rectangular loaf tin by greasing it and lining it with baking paper.
  2. Start by mashing the bananas in a bowl. Add the eggs, vanilla, and yogurt, then mix well.
  3. Gradually add the oil while mixing until well combined.
  4. Sift in the dry ingredients: flour, baking powder, and baking soda. Stir until just combined.
  5. Fold in the chopped walnuts.
  6. Pour the batter into the prepared tin, then top with ½ cup of chopped pecans and chocolate shavings if desired (I used dark chocolate).
  7. Bake for about an hour or until a wooden skewer inserted into the center comes out clean.
  8. Enjoy your moist, delicious banana bread!
