Tea Bread with Dried Fruits

This is a no-knead tea bread recipe that’s simple, cozy, and delicious. You can use any dried fruits you like — I chose raisins, apricots, and cranberries for a lovely mix. Perfect with a cup of tea.

Elements

  • 100 g dried apricots (¾ cup)
  • 100 g raisins
  • 100 g dried cranberries
  • ½ cup sugar (optional)
  • 300 ml hot strong black tea
  • ½ tsp bicarbonate soda
  • 1 tsp baking powder
  • 2 cups flour
  • 1 tsp cinnamon
  • 1 cinnamon stick
  • 1 name egg, lightly beaten

Alchemy

  1. Soak dried fruits with hot tea, cinnamon stick, and sugar (if using). Leave 5 hours or overnight.
  2. Preheat oven to 180°C. Grease and line a rectangular baking tin.
  3. Mix soaked fruits with sifted flour, baking powder, bicarbonate, cinnamon, and egg.
  4. Pour into tin, bake ~1 hour or until a skewer comes out clean.
  5. Cool 10 min, slice, and serve with butter.
