Easy Apple Pie
Pie season is here this quick version is my go-to — soft, warm, and full of cinnamon, ginger, and tender apples.

- 2 firm apples
- 1 tbsp cinnamon
- 1 tsp ginger
- ½ cup soft brown sugar
- 1 tbsp lemon juice
- 1 cup sugar
- 110 g butter
- 2 eggs
- ¾ cup flour
- 1 cup buttermilk
- 1 tsp vanilla
- 1 tbsp baking powder
- ½ cup ground almonds
- ¼ tsp salt
- 2 tbsp sliced almonds (for topping)
Alchemy
- Preheat oven to 180°C. Butter and line a pie dish.
- Peel & dice apples. Cook with cinnamon, ginger, brown sugar, and lemon juice ~20–30 min until tender. Cool.
- Beat butter + sugar until fluffy. Add eggs & vanilla one at a time.
- Fold in sifted flour, baking powder, salt, alternating with buttermilk.
- Add the ground almonds.
- Place cooled apple mix in pie dish, top with batter, sprinkle sliced almonds.
- Bake ~45 min until golden and a skewer comes out clean.
