Spiced date cookies

Got extra dates lying around? Try this simple spiced date cookies recipe. They're a delicious match for your morning coffee. Give them a whirl and satisfy your sweet tooth!

  • 180 g unsalted butter
  • ½ cup caster sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1 ½ cup self-raising flour
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon ground cardamom
  • ½ teaspoon ground cloves (optional)
  • 1 cup dried and pitted dates (I used a mix of dates)
  • 1 cup chopped walnuts or pecans.
  • Splash of milk

Alchemy

  1. Preheat the oven to 180 and prepare your baking trays with baking paper.
  2. Beat butter, essence, sugar, and egg until light and fluffy (you can use the electric mixer to make it faster).
  3. Add the sifted flour and the spices then stir in the dates and the chopped nuts.
  4. Refrigerate for thirty minutes (this step will help prevent the cookies from spreading too much).
  5. Roll rounded teaspoons of mixture into balls, and place on the baking trays for about 15 minutes or until lightly browned.
  6. Enjoy it with a cup of coffee!
