Classic Marble Cake
I’ve tried many recipes for marble cake, and I like this one the most. The use of melted dark chocolate with espresso coffee gives the chocolate part a rich taste. It’s easy to make and a great companion to your cup of coffee.

- 125 g butter, softened
- 2 cups self-raising flour
- 1 1/4 cups caster sugar
- 2 tablespoons strong black coffee
- 4 eggs
- 100 g dark chocolate tablet (I used 70% cocoa)
- 1/2 cup ground almonds
- 1 cup plain yogurt
- 3 tablespoons cocoa powder
- 1 teaspoon vanilla extract
Alchemy
- Preheat the oven to 180°C.
- Butter a round cake tin and line it with baking paper or dust it with flour.
- Put the chocolate and coffee in a heat-proof bowl over a saucepan of gently simmering water until the chocolate is melted.
- Leave to cool.
- In a mixing bowl, beat the butter and sugar with an electric mixer until light and fluffy.
- Beat in the eggs with the vanilla, mixing well between each addition.
- Stir in the sifted flour and yogurt until well combined.
- Gently fold in the ground almonds.
- Divide the mixture into two halves.
- Add the melted chocolate and cocoa powder to one half and mix well.
- Spoon the vanilla and chocolate batters alternately into the prepared tin and smooth the surface.
- Using a wooden skewer, swirl the chocolate and vanilla mixtures.
- Place the cake in the preheated oven and bake for about 1 hour, or until a wooden skewer inserted into the cake comes out clean.
- Remove the cake from the oven and allow it to cool for about 10 minutes before serving.
